Nectarine Butter

Active time: 30 minutes

Total time: 30 minutes, plus cooling time

Makes approximately 2 cups

2 pounds nectarines

1/2 cup granulated sugar

Juice of 1/2 lemon

1/2 cup water

1 tbsp butter

Step 1

Remove pits from nectarines. Chop the fruit into small pieces, leaving the skins on.

Step 2

In a saucepan cook the fruit, water, sugar, and lemon juice over medium-high heat until the fruit is soft when you poke it with a wooden spoon, around 10 minutes.

Step 3

Put the saucepan mixture into a food processor or blender. Blend it until it’s the texture you prefer. (This can be chunky or smooth, depending on your taste.)

Step 4

Return the mixture to the saucepan and simmer on low for another 15-20 minutes until it thickens. Add the butter and stir to incorporate.

When it’s finished, put it in a temperature-resistant container and let it cool in the fridge until it’s chilled.
