Grilled Lemon-Garlic Chicken Wings

Serves 4-6 as an appetizer

Prep time: 75 minutes, including brining

Cooking time: 1 hour

Ingredients

3 lbs chicken wings, bone-in

3 garlic cloves, chopped

3/4 cup fresh lemon juice

1/4 cup

1/2 tsp dried thyme

1/2 tsp dried oregano

For the brine:

1/2 cup

1/2 cup

1 quart water

Directions

1. Mix the salt, sugar and water together in a large bowl. Add the wings, cover, and allow to soak in the refrigerator for at least one hour, and up to 90 minutes. When complete, discard the brine and pat the wings with a paper towel to dry them a little bit.

.2. Set your grill to medium heat. If possible, prepare your grill for indirect cooking.

3. Grill the wings to cook them, turning occasionally, for approximately 45 minutes. (You can tell when the wings are nearing completion by poking them with a knife. If the juice runs clear, they are nearly cooked.)

4. In a small bowl, sprinkle a little salt. Add the garlic and mash into a paste using the back of a heavy spoon.

5. In a small saucepan, heat the olive oil over medium heat. When it’s shimmering and aromatic, add the garlic paste and stir occasionally until the garlic becomes aromatic.

6. Mix the oil and garlic with the lemon juice and herbs and stir well to incorporate.

7. At the 45-minute mark of cooking, remove the wings and toss them in the lemon-garlic sauce. Return them to the grill and let them cook until finished, approximately 20-25 minutes more. Occasionally baste them with the remaining sauce.

Once cooked, you can toss them in the sauce one last time to really emphasize the lemon and garlic, or just serve them right off the grill!
